Ingredients

  • 1.5 lbs ground beef (80/20)
  • Kosher salt
  • Coarse pepper
  • 4 slices sharp cheddar
  • 4 brioche buns
  • Butter for the buns

Instructions

    Form 4 loose patties, slightly wider than the buns. Dimple the center.

  2. 02

    Heat a cast iron griddle over hot coals.

  3. 03

    Salt patties just before they hit the pan. Sear 3 minutes per side.

  4. 04

    Top with cheddar in the last minute, cover with a lid to melt.

  5. 05

    Toast buttered buns on the griddle. Build and eat hot.
