Ingredients
- 2 ribeye steaks, 1.5 inch thick
- Kosher salt
- Coarse black pepper
- 2 tbsp neutral oil
- 3 tbsp butter
- 4 sprigs thyme
- 3 garlic cloves, smashed
Instructions

Pat steaks dry. Salt generously and rest at room temp for 40 minutes.

Heat cast iron skillet over high heat until smoking.

Add oil, then steaks. Sear 3 minutes without moving.

Flip. Add butter, thyme, and garlic. Baste for 3 minutes.

Pull at 125F for medium rare. Rest 8 minutes before slicing.
