Ingredients
- 2 lbs stew meat, cubed
- 1 onion, diced
- 3 carrots, chunked
- 3 potatoes, chunked
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 bay leaves
- Salt and pepper
Instructions

Season meat and sear in batches in a hot Dutch oven.

Add onion and tomato paste. Cook 3 minutes.

Pour in broth, scrape the bottom, add bay leaves.

Cover and simmer 90 minutes until meat is tender.

Add carrots and potatoes. Simmer 30 more minutes.
