Ingredients
- 1 chuck roast, 3-4 lbs
- 2 tbsp kosher salt
- 2 tbsp coarse pepper
- 1 tbsp garlic powder
- Beef tallow or oil
Instructions

Trim hard fat. Coat in oil, then rub with salt, pepper, and garlic.

Smoke at 225F until bark sets and internal hits 165F, about 4 hours.

Wrap tightly in butcher paper or foil with a splash of beef broth.

Return to smoker until probe-tender at 203F.

Rest in a cooler for 1 hour, then slice across the grain.
